5E encumbrance seems really restrictive According to the PHB, you multiply strength by 15 to determine how much a character can carry, and by 5 to determine how much they can carry before having their movement speeds slowed.
These include but are not limited to: A) Spell slots, B) Rest-based abilities, C) Hit Points and Hit Dice, D) Material Components with gold costs, E) Consumables, e.g. ammunition or potions, F) wealth, and G) weight. People tend to ignore encumbrance because keeping track of weight tends to take away from being in the moment.
However, STR does affect how much loot a character can carry before encumbrance (i.e. slower movement). Additionally, some enemy spells can lower STR, rendering a sorcerer helpless; a minimum of 10 STR is good.

Encumbrance slots equal to your strength score, all items are 1 slot, ammo is 10 to 1 slot, heavy items are 2 slots, items you can palm are no slots. I'd think this would extend to Bags of Holding like items as well. You should be able to store items in these "containers" so it takes away the weight - or like above (Peteranimator) said - in backpacks so you could just unequip the backpack (or drop it) and it would drop that weight for you so you wouldn't have to unequip or overwrite weight to 0 for a low Str Character.

I updated the Roll20 character sheet, adding in a calculated encumbrance field and updating the inventory page to make it easier to manage.
